Key Identification Features
- Subterranean (hypogeous) truffle 2–7 cm, rounded, with warty black exterior and white to cream interior with white veins, intensely complex fruity-garlicky-earthy aroma when ripe. Found 2–30 cm underground in Douglas-fir forest soil in PNW lowlands. Must be harvested at peak ripeness for best aroma.
Preparation Notes
One of the finest North American truffles. Shave over pasta, eggs, risotto, or incorporate into butter. Do not cook; use raw or barely heated to preserve aroma. Must be ripe.
